Chicken with Rosemary

Ingredients for 4 servings

  • 700 gr chicken breast fillet

(in small portions)

  • 700 gr chicken thigh fillet

(in small portions)

  • 150 ml olive oil
  • 3 squeezed lemons
  • 500 ml Kechribari retsina
  • 1 sprig of fresh rosemary

(only the leaves)

  • 4 tsp. mild mustard
  • salt / freshly-ground pepper

Execution

In a large pot or frying pan, heat the olive oil over high heat and sauté the chicken pieces.

Pour the lemon juice and mustard over and let the chicken absorb its liquids.

Add the rosemary, salt, freshly-ground pepper and, lastly, the retsina, lower the heat and let the food simmer for approximately 20 minutes.

Garnish with fresh rosemary and serve immediately. Enjoy it with a cool glass of Kechribari retsina.
